Hey all!

Today is my first day of phase 2. I lost 10 lbs. on phase 1. Whoohoo!

I was wondering if anyone has had success with South Beach while living away at college. I'm home for the summer now and my mom is also on SB so it's pretty easy, but I know it will be harder when I get to school. Any tips on how to stick with it in a not-so-conducive environment? (I have a kitchen at school, but not a lot of time or money, and I DO have a meal plan).

South Beach without veggies?
So my brother-in-law was just diagnosed with diabetes and extremely elevated triglycerides. I know that South Beach is good for both of those and I was telling my sister that he really should try it. His only problem is that he hates vegetables. He likes corn, and can tolerate peas and carrots, but that's about it. I really didn't have any good advice to that, since I am fortunate enough to love veggies. Anyone here on SBD but don't like veggies?? What do you do in that case? Ideas?

Phase One, Take Two, struggles, and a question.
Well, thanks to female issues compounded with digestion issues due to lack of gall-bladder, I decided to forego the diet a couple of days into phase 1 for the week because between the cramps, the mood swings and the chocolate cravings, I just couldn't do it. I felt like crap, and when the carb detox set in, I felt even worse.

Does anyone know if Worcestershire sauce is allowed?

I already had my fridge stocked with goodies like low-fat colby jack cheese-sticks, almonds (pre-counted into baggies). Peanuts were such an issue that I wound up gaining a pound after eating a whole jar in like, two days...so peanuts are DEFINITELY a bad idea, although I wonder if the shell-on might be better since I have to work at cracking them? But anyway, I also have SF pudding for snacks, boston-leaf lettuce as well as romain and portabello mushroom caps for lunch, some low-fat deli-meat, hummus, pickles and a seedless cucumber. Incidentally...dill pickles+lemon and garlic hummus=YUM!!

My biggest obstacle now is that my parents (mom, mostly) are not even being vocally supportive and are NOT being the most accommodating. My mom seems to think that this plan wreaks havock on my digestive system since my gall-bladder was removed (I did have bad stomach issues during the first two days of phase one, but that seems to be the result of a stomach bug/female issue more than a response to dietary things), and so she's constantly asking me why I'm doing this to myself. I keep telling her because I knew from the last time I did this thing it worked! The first time I did this, I lost about 20 pounds before I started to fall off the wagon.

Now, though, I'm starting to realize why things were working against me and why it didn't take me long to go back to the old habits.

I eat breakfast and lunch on my own (if I eat it at all), but dinner is usually with my parents, and I'm kind of at the mercy of whatever they decide to make. We do a lot of chicken and chef salad, which is fine if I bring over a homemade balsamic vinegrette (they've rediscovered it and LOVE that. I make it without any sugar and a bit of grey poupon). I still make the balsamic vinegrette chicken from the South Beach Diet cookbook about once a month! They are big fans of that recipe, as well, so if that's any indication, I think they'd probably get used to the modifications, but they're just not willing to break routine.

Sometimes, the routine is good. Sometimes, not so good. About every other week, they do vegetarian burritos with homemade refried beans, which is great, because I can just go without the tortilla and we use low-fat cheese and sour cream anyway. Sunday nights, my dad always cooks. He either grills out or makes shrimp. Shrimp is perfect for SBD, but with shrimp comes coleslaw that has...you guessed it...sugar in it. Even getting him to sub splenda for the sugar is out of the question.

During the week, sometimes mom bakes boneless/skinless chicken breasts, which is great and we have that with a salad and veggie. But then a lot of times (especially during the summer when it's in season) she'll make squash casserole and that'll be dinner along with a salad. Then there's homemade mac and cheese (while tastey, is DEFINITELY off-limits) and quiche, which would be fine if mom used low-fat cheese and low-fat whipping cream and made it sans crust, but she doesn't.

Sunday nights, as I said, dad always cooks. Sometimes he makes shrimp (which is great), but then sometimes, he grills chicken (thighs and drumsticks, skin on!) and slathers it in this barbeque sauce that's LOADED with sugar and with that, serves applesauce and yellow rice or mashed potatoes, which while tastey, is ENTIRELY off-limits. I suppose I can bring a bit of south beach surprise mashed "potato" for me, but still, I have no will-power. I want to spend time with them and dinner is the only chance I really get to see my parents and the only chance for conversation with my dad, so avoiding dinner altogether is not a real solution. Friday night, for instance, was red beans and rice, and brown rice was DEFINITELY not used. Thanks to stomach problems (which persisted after I stopped phase 1, so I know that it wasn't due to SBD), I just sat there while they ate. Tonight it's shrimp and grits. With cheesey garlic bread. And dessert because we're having company and a salad. See what I mean? They're not making this v. easy at all. I'm not starting things over again until tomorrow, so I'll scarf all this down to my heart's content.

I've tried taking over cooking duties and for some reason, my mom does not like me doing that at all unless it's an occasional thing when she doesn't have time to make dinner. I can't even plan ahead for dinner with her, because apparently planning for dinner stresses her out.

But at least Monday and Tuesday night, dinner is a non-issue because she won't be around.

Dinner Monday night is a modified version of
this recipe. I'm nixing the gravy that goes on top (so I'm not cooking with wine or flour) and I'm subbing feta cheese for ricotta in the stuffing mixture and wrapping the chicken with a peice of turkey-bacon. With that, I'll have a greek salad and some roasted veggies.

Tuesday night's dinner is a grilled ham steak with some cannellini beans on the side and broccoli.

I think Wednesday is going to be refried beans again. YAY! But the rest of the week? We'll see.

I obviously have a long way to go, but I am really enjoying South Beach. It's by far the easiest "diet" I've ever been on. Granted, the first few days were tough, but now I am in the groove. I've even allowed myself one cheat per month and some bites of forbidden foods and it's still going well. Yay for South Beach and yay for me! I feel that it's ok to be self-congratulatory in this community. =)
